Some of you know that I'm Finnish from reading my profile, right? Well, here is a wonderful Finnish recipe for Maustekakku, or Spice Cake. Enjoy!
Spice Cake
2/3 Cup of melted butter
2 Cups of brown sugar
3 Eggs
2 Cups of flour
1/2 Cup of ground almonds
1 graded orange rind
1/2 tsp. of cloves
1/2 tsp. cinnamon
1/2 tsp. cardamom*
1/2 tsp. nutmeg
2/3 cup cream
2 tsp. baking soda
Beat together melted butter and sugar until frothy. Beat eggs, add to mixture. Stir in cream.
Combine dry ingredients together. Gradually mix with wet. Stir in ground almonds and grated orange rind. pour into tube pan that has been greased and dusted with bread crumbs. Bake @ 350 Degrees F for approximately one hour.
For small cake approximately 35 minutes.

*Cardamom is a Scandinavian spice that you can get at some grocery stores, but is usually hard to find.
